Raw celery or boiled celery — does cooking make food gentler?

Yes — mainly because of particle load. If visible roughage or residue in output is a problem for you, Celery — boiled & drained is worth trying. If you're tolerating Celery — raw without issues, the difference may not show up for you personally.

Cooking is often talked about as though it settles any food down, and celery is a good test of that. Boiling softens the structure and washes some of it away, so the particle load drops and it does sit easier. What it doesn't do is make celery a low scorer — it stays in the middle of the range. Cooking moves the number for some foods a long way and others hardly at all, so it's worth checking rather than assuming.
