The viral TikTok lasagna soup, reworked to go easy on a sensitive gut — same cosy, cheesy comfort, built on infused oil and soft, well-cooked pasta. Cook once, feed the family.

The lasagna soup all over TikTok looked incredible — and, honestly, like a rough night waiting to happen. The viral version is loaded with onion, garlic, chilli and rich sausage, and on our scale it lands right at the top — a 10 out of 10 for a sensitive gut. I still wanted it. So I reworked it: same cosy, cheesy, tomatoey bowl, built on garlic-infused oil, onion- and garlic-free stock, smooth passata and soft, well-cooked pasta. This gentler version comes in around 4.0 out of 10 — a big drop, and a completely different bowl for your gut, without giving up the comfort. Here's how I make mine, with the trigger stuff kept on the side so the whole family still gets theirs. (These are modelled estimates, not medical advice — everyone's different.)

  • 500 g beef mince
  • 20 g garlic-infused olive oil
  • 700 g tomato passata
  • 30 g tomato paste
  • 900 g onion- and garlic-free beef stock
  • 250 g macaroni
  • 80 g baby spinach
  • 100 g ricotta
  • 40 g parmesan
  • 2 g dried oregano
  • 2 g dried basil

Method

  1. Warm the garlic-infused olive oil in a large pot over medium heat. Add the beef mince and cook, breaking it up, until well browned. No infused oil? Warm plain olive oil on low with a halved garlic bulb (and a peeled, halved onion if you like) for 10–20 minutes while you prep, then lift every piece out before anything else goes in. How it works.
  2. Stir in the tomato paste and cook for a minute, then pour in the tomato passata and beef stock. Add the dried oregano and basil.
  3. Bring to a gentle simmer and cook low and slow for 20–25 minutes, so everything is very soft and the flavours come together.
  4. Add the macaroni and simmer until soft, about 10 minutes. Stir the spinach through at the end and let it cook right down until wilted and soft.
  5. Serve topped with a spoon of ricotta and a little parmesan.

Gentler swaps

  • No garlic-infused oil? A plain good olive oil still works — you lose a little savoury depth but keep it gentle.
  • Passata keeps it smooth (skins and seeds removed); if you only have chopped tomatoes, blend them first.
  • Small, well-cooked pasta (macaroni, risoni, broken spaghetti) is gentler than big torn lasagna sheets.
