A smooth, comforting potato and carrot soup built on onion-free stock, topped with garlic-butter croutons for crunch. Gentle, hydrating and genuinely satisfying.

Soup is one of the kindest things you can give a sensitive pouch — soft, warm, hydrating, low-residue. This one is pure comfort: potato and carrot simmered soft in onion-free stock, then blended smooth with a swirl of cream.

What lifts it from 'invalid soup' to a meal is the garlic-butter croutons on top. They give you the crunch a smooth soup is missing, then soften quickly once eaten.

Ingredients

  • Soup*
  • 400 g potato, peeled and chopped
  • 300 g carrot, peeled and chopped
  • 800 ml onion-free stock
  • 1 tbsp garlic-infused oil
  • 80 ml cream
  • Croutons*
  • 100 g white bread, cut into small cubes
  • 20 g butter
  • 1 tbsp garlic-infused oil

Method

  1. Warm the garlic-infused oil in a large pot over a medium heat. Add the potato and carrot and stir for a minute.
  2. Pour in the stock, bring to a simmer, and cook for 18–20 minutes, until the vegetables are very soft.
  3. Meanwhile, make the croutons: gently melt the butter with the garlic-infused oil, toss the bread cubes through it with a little salt, and bake at 190°C for 10–12 minutes until golden and crisp.
  4. Blend the soup until completely smooth. Stir in the cream, season with salt and a little white pepper, and loosen with a splash more stock or water if it's too thick.
  5. Ladle into bowls and top with the warm garlic croutons.

Gentler swaps

Stock & garlic: onion-free stock and garlic-infused oil give the soup its savoury base without onion and garlic.

Crunch: the garlic croutons add texture a smooth soup lacks; toasted garlic breadcrumbs work too.

Dairy-free: leave out the cream and the soup is still lovely and smooth from the potato.
