Soft tortillas filled with warmly spiced beef, cheese, shredded lettuce and avocado — taco night made gentle, with all the salsa-and-jalapeño extras kept on the side for the others.
Taco night is one of those meals where everyone builds their own, which makes it perfect for a pouch — you stay in control of exactly what goes on yours.
The beef is seasoned the gentle way: cumin and sweet paprika rather than a hot taco mix, garlic-infused oil and a little tomato paste instead of onion and garlic. I go for soft tortillas over crunchy hard shells (kinder on the pouch), with cheese, finely shredded lettuce and soft avocado. Then the loud toppings — salsa, jalapeños, raw onion — sit in bowls for whoever wants them.
Ingredients
- 8 small wheat tortillas (about 240 g)
- 400 g beef mince
- 1 tbsp garlic-infused oil
- 1 tsp ground cumin
- 1 tsp paprika (sweet)
- 30 g tomato paste
- 150 ml onion-free stock (or other low-FODMAP stock)
- 1 /4 tsp salt
- 120 g tasty cheese, grated
- 80 g iceberg lettuce, finely shredded
- 100 g avocado, sliced
Method
- Heat the garlic-infused oil in a pan over a medium heat. Add the beef mince and brown it well, breaking it up.
- Stir in the cumin and paprika and cook for a minute, then add the tomato paste and cook for another minute.
- Pour in the stock, add the salt, and simmer for 8–10 minutes, until thick.
- Warm the tortillas in a dry pan or the oven until soft and pliable.
- Let everyone build their own: beef, grated cheese, finely shredded lettuce and a couple of slices of avocado in each tortilla.
Gentler swaps
Soft over crunchy: soft tortillas are gentler on the pouch than crisp hard shells. Use corn tortillas if you avoid wheat — they're a little firmer, so warm them well.
Lettuce: shred it finely so it's soft rather than coarse and stringy.
Heat: sweet paprika seasons the beef without chilli heat; keep the actual chilli for the side.
