Sweet, soft pumpkin glazed in onion-free stock with garlic oil, thyme and a touch of maple — the gentle, glossy side that goes with almost any plate.
Pumpkin is a gentle, low-residue favourite once it's cooked properly soft — sweet, comforting and easy on the pouch. Glazed in stock the same way as the carrots, it turns silky and glossy with a quiet savoury-sweet edge.
It's a lovely partner to a bit of chicken or fish, or just folded through soft rice.
Ingredients
- 600 g pumpkin, peeled, de-seeded and cut into chunks
- 250 ml onion-free stock
- 1 tbsp garlic-infused oil
- 2 tsp maple syrup
- 1 sprig thyme (about 2 g)
- 20 g butter
Method
- Put the pumpkin chunks in a wide pan with the stock and thyme. Bring to a simmer over a medium heat.
- Cook gently, turning now and then, for 15–18 minutes, until the pumpkin is soft and most of the stock has cooked away. Be gentle so it holds its shape.
- Add the garlic-infused oil and maple syrup and cook for 2–3 minutes, spooning the glaze over, until glossy.
- Stir in the butter off the heat for shine, season with a little salt, and serve.
