The Italian trick of toasting breadcrumbs in garlic oil until golden — a crunchy, savoury topping that adds texture and flavour to soft food and dissolves quickly afterwards.

This is my favourite gentle-kitchen discovery: pangrattato, the Italian habit of frying breadcrumbs until golden and scattering them over pasta and soft veg. It's sometimes called 'poor man's parmesan', and for a pouch it's close to magic — all the crunch and toasty flavour you crave on bland, soft food, but the fine crumb softens and breaks down fast once you've eaten it.

Toast them in garlic oil or garlic butter and they carry that savoury, garlicky hit too. Make a jar and sprinkle it on everything for a week.

Ingredients

  • 120 g breadcrumbs (fresh or dried)
  • 2 tbsp garlic-infused oil
  • 20 g butter
  • 10 g parsley, finely chopped

Method

  1. Warm the garlic-infused oil and butter in a wide frying pan over a medium heat until the butter melts.
  2. Tip in the breadcrumbs and stir to coat.
  3. Keep stirring for 4–6 minutes, until the crumbs turn deep golden and crisp — don't walk away, they catch quickly at the end.
  4. Take off the heat, season with a little salt, and stir through the chopped parsley. Cool, then store in a jar.
